Strawberry oreo tart

Makes one large tart

Base

2 tubes of original Oreos

50 grams of unsalted butter

Chocolate filling

200 grams of good quality dark chocolate

250 grams of good quality milk chocolate

250 millilitres of thickened cream

Strawberry filling

200 grams of good quality strawberry chocolate (you can substitute with white chocolate)

100 grams of thickened cream

For presentation

Fresh raspberries, strawberries and blueberries

Make the base

  1. Twist the Oreos to separate them. Scrap the cream filling out and set aside.
  2. Place the Oreo cookies in a food processor. Pule until they are fine crumbs.
  3. Melt the left-over Oreo cream with the butter.
  4. Combine the butter mixture with the Oreo crumbs to form a wet ‘dough’.
  5. Press the mixture on to the base and sizes of the case using your hands or the back of a spoon.
  6. Chill the tart base in the fridge for 30 minutes or until set.

Make the chocolate filling

  1. Place the dark chocolate and milk chocolate in a heat proof bowl.
  2. Heat the cream in a small saucepan until almost boiling.
  3. Pour the hot cream over the chocolate and allow to sit for 30 seconds.
  4. Mix the chocolate and cream together, ensuring there are no lumps. Set aside to cool.

Make the strawberry filling

  1. Place the strawberry chocolate in a heat proof bowl.
  2. Heat the cream in a small saucepan until almost boiling.
  3. Pour the hot cream over the chocolate and allow to sit for 30 seconds.
  4. Mix the chocolate and cream together, ensuring there are no lumps. Set aside to cool.

Assemble the strawberry Oreo tarts

  1. Remove the tart case from the fridge.
  2. Pour the chocolate filling into the tart case. Chill the tart in the fridge for 30 minutes or until set.
  3. Pour the strawberry filling on top of the set chocolate filling. Chill the tart in the fridge for 30 minutes or until set.
  4. Decorate with fresh berries.
