Popcorn nut bars

Makes one slice tray (approximately 30cm x 23cm)

Popcorn nut bars

50 grams of popcorn kernels

400 grams of dry roasted nut (I used walnuts, pecans, hazelnuts and almonds)

25 grams of coconut chips

250 grams of coconut oil plus an extra tablespoon

150 grams of maple syrup

25 grams of dark chocolate (melted)

Make the popcorn nut bars

  1. Line a 30cm x 23cm rectangle slice tray with baking paper.
  2. In a large saucepan, place the popcorn kernels and the tablespoon of coconut oil. Heat over a medium heat with the saucepan lid on until all the popcorn kernels have popped. Set aside to cool.
  3. In a large mixing bowl, place the cooled popcorn, nuts and coconut chips.
  4. In a small saucepan, melt the remainder of the coconut oil with the maple syrup.
  5. Add the coconut oil and maple syrup to the bowl and combine well. Ensure that all the popcorn, nuts and coconut chips are coated evenly.
  6. Place the mixture into the prepared tray and drizzle the melted dark chocolate over the bars.
  7. Chill in the fridge for 30 minutes or until set.
  8. Using a sharp knife, cut into bars. Store in the fridge.
