Peppermint choc chip cookies

Happiness is a plate of warm cookies.

Makes 12 to 18 cookies

Peppermint choc chip cookies

260 grams of plain flour

20 grams of Dutch cocoa powder

¾ teaspoon of baking powder

½ teaspoon of salt

90 grams of unsalted butter (softened)

80 grams of caster sugar

80 grams of brown sugar

1 large egg

1 teaspoon of vanilla bean paste

1/2 teaspoon of peppermint essence

3 teaspoons of whole milk

150 grams of dark chocolate chips

Make the peppermint choc chip cookies

  1. Preheat your oven to 180C.
  2. Line a baking tray with non-stick baking paper.
  3. In a medium bowl, sift the flour, cocoa powder, baking powder and salt. Set aside.
  4. In the bowl of a stand mixer, beat the butter until smooth.
  5. Add the caster sugar and brown sugar to the butter mixture and cream for 3 to 5 minutes or until light and fluffy.
  6. Slowly add the egg, vanilla bean paste and peppermint essence to the butter and sugar mixture. Mix until combined.
  7. Add the flour mixture in three batches. Mixing to combine in each batch.
  8. Add the milk and choc chips. Combine well.
  9. Form the cookie batter into balls and place on the baking tray.
  10. Bake for 20 minutes or until golden brown.
