Peppermint choc chip cookies
Happiness is a plate of warm cookies.
Makes 12 to 18 cookies
Peppermint choc chip cookies
260 grams of plain flour
20 grams of Dutch cocoa powder
¾ teaspoon of baking powder
½ teaspoon of salt
90 grams of unsalted butter (softened)
80 grams of caster sugar
80 grams of brown sugar
1 large egg
1 teaspoon of vanilla bean paste
1/2 teaspoon of peppermint essence
3 teaspoons of whole milk
150 grams of dark chocolate chips
Make the peppermint choc chip cookies
- Preheat your oven to 180C.
- Line a baking tray with non-stick baking paper.
- In a medium bowl, sift the flour, cocoa powder, baking powder and salt. Set aside.
- In the bowl of a stand mixer, beat the butter until smooth.
- Add the caster sugar and brown sugar to the butter mixture and cream for 3 to 5 minutes or until light and fluffy.
- Slowly add the egg, vanilla bean paste and peppermint essence to the butter and sugar mixture. Mix until combined.
- Add the flour mixture in three batches. Mixing to combine in each batch.
- Add the milk and choc chips. Combine well.
- Form the cookie batter into balls and place on the baking tray.
- Bake for 20 minutes or until golden brown.
